EXOTIC SPICY CHICKEN FILLETS (SERVES 4)

Ingredients 4 Chicken fillets (skinless) 2 heaped teaspoons BioSpice™ Country Chicken 2 heaped teaspoons BioSpice™ Exotic Curry 1 Tablespoon (15ml) Butter 1 Tablespoon (15ml) Olive Oil (Olive oil mix prevents butter from burning) Method • Mix BioSpice™ Country Chicken with BioSpice™ Exotic Curry. • Place chicken fillets on a board and gently flatten with a meat mallet. Take care not to shred the fillet. • Rub chicken fillets evenly with the BioSpice™ mix. • Heat butter and olive oil in a large frying pan until it sizzles. Turn to medium heat, add chicken fillets. Cook 3-5 minutes, turn and cook for a further 3-5 minutes until the chicken fillets are firm but not dry. • Serve immediately with baby potatoes and a green salad.
